The story

Crafted with passion, served with love

Restaurant Hummer sits at the quieter end of Nyhavn, surrounded by historic buildings and old ships with a view over the inner harbour. The philosophy, as stated by founders Thomas Haldrup and Ronni Mikkelsen, is refreshingly unambiguous: "Fish and seafood of the highest quality, fine wines and plenty of good moments." That clarity carries through to every part of the experience.

White Guide rates Hummer at its "Very fine level" and places it at the top among Danish seafood restaurants — a guarantee, in their words, of fresh seafood, exclusive caviar at reasonable prices, and light fish dishes. The recognition is well earned.

The Menu

The à la carte menu is built around sharing and grazing, with snacks, smaller plates and larger mains that blur neatly into one another. Caviar is classically served on blinis with finely chopped red onion and crème fraîche — a firm-membraned roe with clean acidity, light umami and dry nutty notes in the finish. The lobster roll pairs juicy langoustine with salted celery, chives, tarragon and cress in a brioche bun. Raw sole (helleflynder), lightly salted, comes with dill oil, olive-oil marinated cucumbers and powdered sea lettuce — a dish that rewards attention.

Among the larger plates, the grilled half or whole lobster with clarified butter, lemon and soured-cream salad is the house signature. Pan-fried cod with pickled ramsons and a bouillabaisse-style cream sauce rounds out the mains with equal conviction.

The Seafood Platter

For those who want the full sweep of the sea, the seafood platter — poached lobster, oysters, crab, langoustine, blue mussels and shrimp — is priced with notable fairness for what it delivers. A "Royale" upgrade adds two varieties of French oysters, heart mussels, king crab and mantis shrimp. Both versions can be enhanced with 30g of Gold Caviar.

Wines and Setting

The wine list leans heavily into Burgundy and German Riesling, the latter a natural companion to the kitchen's lighter fish preparations. Champagne runs from entry-level to Krug and vintage Bollinger. The harbour-side setting, attentive service and outdoor seating complete a picture that White Guide calls "absolutely top-notch." For seafood lovers in Copenhagen, Hummer is a serious address.

Hummer in Nyhavn is at the top among Danish seafood restaurants – and is always a guarantee of fresh seafood, good exclusive caviar at reasonable prices and light fish dishes. If you are into an extravagant meal with poached lobster, oysters, crab, langoustine, blue mussels and shrimp, the extremely fairly priced seafood platter is a tour de force in flavor. It is also available in a “Royale” version, which includes both French Papillon no. 5 and Le Gall Premium oysters as well as heart mussels, king crab and mantis shrimp. From the à la carte menu it is recommended to start the experience with the restaurant’s caviar, which is classically served on blinis with finely chopped red onion and crème fraîche. The beautiful fresh roe (baeriæg) has a good firm membrane and reveals a fine fresh acidity, light umami and dry notes of nuts and oak in the aftertaste. The menu differentiates between smaller and larger dishes without this materializing significantly in the content or size of the plate. Among the smaller dishes is an excellent crispy lobster roll, which besides juicy lobster contains salted celery, chives, tarragon and cress. The similarly smaller dish of raw sole (helleflynder) served lightly salted has a beautiful flesh structure and a wonderful taste of light fish, complemented by a well‑composed dressing of soured cream and dill oil, crisp olive‑oil marinated cucumbers and fresh salad sprinkled with powdered sea lettuce, sea beet, which gives the dish light salty and sweet hazelnut notes. The third of the smaller dishes consists of homemade lobster ravioli, served al dente with fried sage, which adds a slight bitterness, good parmesan cheese and fresh strong spring onions. Among the larger dishes is, what should be the restaurant’s signature dish, the grilled lobster with clarified butter, lemon and salad with soured cream. Unfortunately the lobster is a bit dry, so perhaps you should ask for it rare or medium‑rare? Among the other larger dishes is also a light serving of a delicious pan‑fried cod with fine flesh structure, served with pickled ramsons and a strong creamy sauce that tastes almost like bouillabaisse, to which we drink an appropriate crisp German Riesling. Both the fresh service attentiveness and the surplus as well as the location are absolutely top‑notch – and Hummer is definitely worth a visit for both fish and seafood lovers.
