Thoughtfulness Can Be Tasted

Geranium occupies the eighth floor of the building overlooking Fælledparken — Copenhagen's Common Gardens — where the view shifts with the seasons: tree canopies, the city's green copper rooftops, and the distant windmills of Øresund just visible on the horizon. The setting is not incidental. It is the argument. The restaurant's entire philosophy is built around the tension between the urban and the natural, and the kitchen translates that tension directly onto the plate.

Rasmus Kofoed and Søren Ledet

The two names behind Geranium are chef Rasmus Kofoed and co-owner and wine director Søren Ledet. Kofoed is a Bocuse d'Or winner, and together with Ledet he has built one of the most consistently recognized restaurants in the world. Geranium climbed steadily through The World's 50 Best Restaurants list across a decade — from 49th in 2012 to 5th in 2019, then 2nd in 2021 — before reaching the very top as the world's number one restaurant in 2022. The White Guide has recognized the kitchen at Global Masters level, and Wine Spectator awarded Geranium its Grand Award as far back as 2016, a reflection of Ledet's deep commitment to the cellar.

New Nordic, Without the Clichés

The kitchen describes itself as lucid, light, and dynamic — words chosen carefully. "Dynamic," in Geranium's own framing, refers to the living formative forces of nature: invisible, but readable through their biological footprints. This is New Nordic cooking taken to a philosophical register, where the goal is to create meals that involve all the senses, restoring, challenging, and enriching in equal measure. The White Guide captured something of this spirit in describing a first appetizer that looks nothing like a herring sandwich — yet announces itself as one the moment you taste it.

The Space and the Experience

The current tasting menu — the Summer Universe — runs a minimum of three hours and is priced at 4,400 DKK per person. Wine pairings range from the entry-level "Heart & Soil" at 2,300 DKK through to the "Rare & Unique" pairing at 20,000 DKK, with a non-alcoholic "Fruit & Vegetables" option also available. The restaurant seats guests in the main dining room, where a fireplace table overlooking the park and the city can be reserved for up to four. For private events, the Inspiration Kitchen — a light-filled room with an open kitchen and wine cellar — accommodates up to sixteen guests and serves the same menu as the restaurant.

Reservations require a deposit of 1,500 DKK per guest and can be made up to three months in advance.
