HimmerRiget

HimmerRiget is Himmerland Resort's fine-dining restaurant in rural Aars, earning White Guide Masters recognition for bold, high-quality Nordic gastronomy.

The story

Crafted with passion, served with love

A Destination Worth the Drive

At the end of hole 18 on the Himmerland Resort's golf course in the remote village of Gatten, near Aars, sits HimmerRiget — a fine-dining restaurant that has no trouble standing on its own terms, entirely independent of the fairways surrounding it. The White Guide awarded it Masters level recognition in 2026, noting that its "elevated culinary sense can cleverly justify the trip" even for those with no interest in golf whatsoever. That is a rare kind of praise, and it is earned.

The Kitchen's Philosophy

Head chef Mads Kongsgaard sets the tone clearly: "It's about creating space for creativity and showing that you dare to be bold in the kitchen, while at the same time safeguarding the highest quality." That balance — between ambition and discipline — runs through everything HimmerRiget does. The restaurant is part of the Michelin Guide 2025, a further mark of the seriousness with which the kitchen approaches each service.

The experience is designed to engage all the senses, with every meal framed as something to be remembered rather than merely consumed. Guests can visit as day visitors, as overnight guests at the resort, or as part of one of Himmerland's curated packages — including the Gastronomic Getaway, the Gastro & Spa Getaway, and the New Year's stay at HimmerRiget.

Wine as a Parallel Story

The drinks programme at HimmerRiget is as considered as the food. The Signature menu pairs each course with wines selected by the sommelier, served in Riedel Veritas glasses to bring out each grape's character. For those who want to go further, the Prestige pairing turns the format on its head: here, rare bottles — normally reserved for private cellars and special occasions — take centre stage, with the food playing a supporting role to the wine's complexity and structure.

Guests who prefer to avoid alcohol are equally well served. The sommelier has developed an entirely in-house non-alcoholic option called Sommelierens Essens — a refined selection of house-made juices and kombucha built on classical technique and a genuine understanding of flavour development.

Getting There

The setting, in the rolling landscape of northern Jutland, is part of what makes HimmerRiget distinctive. The Dyne Larsen family's internationally recognised resort provides a backdrop that is scenic and unhurried — and the restaurant, planted at the edge of that landscape, uses the distance from the city as an invitation to slow down and pay attention.

First immediate thought, as we turn down Lars Larsen’s road in the remote village of Gatten, is that only people who normally enjoy hitting small white balls with clubs and irons could possibly find it reasonable to venture this far out. But let’s say right away—golf cart and green fee are by no means a prerequisite for visiting the Dyne Larsen dynasty’s scenic and internationally recognized golf and spa resort Himmerland. For planted at the end of hole 18 is the associated gourmet restaurant HimmerRiget, which with its elevated culinary sense can cleverly justify the trip for those of us who are far more food‑ than golf‑interested.
