The story
A few minutes from central Aalborg, a whitewashed manor house sits quietly at the edge of the city. Scheelsminde has been in the hands of the Bühlmann family since 1960, when Hugo Jensen and his Swiss-born wife Aloisia Bühlmann arrived in North Jutland to run what was then a celebrated roadside inn. Their son Peter and his wife Mona built it into a full hotel, and today the third generation — Anemette and Danni Bühlmann — leads the property forward. That continuity of ownership, and of purpose, is visible in everything from the carefully restored architecture to the kitchen.
The fine dining heart of Scheelsminde is Restaurant Bühlmann, which earned a White Guide Masters-level recognition in 2026 — the guide's highest tier. The restaurant's kitchen is led by head chef Alexander Johnsen, whose compositions draw on the estate's own park and greenhouse, where many of the menu's ingredients are grown and harvested. The Swiss roots of the founding family and the deep North Jutland soil beneath the manor both inform how new dishes are imagined: reinterpretations rather than replications, with seasonal produce at the centre.
The dining room looks directly over the manor park, and the wine cellar — tended by the restaurant's sommelier — holds a particular passion for red Burgundy and Bordeaux, as well as a curated collection of DRC wines. The wine list is kept in continuous motion, representing producers from across the world's wine-growing regions.
The manor itself is over 200 years old and has been gently modernised under the influence of Swedish architect Pia Cally Wendt, whose brief was to bring the contemporary into conversation with the historic without erasing either. The result is a space that feels considered rather than renovated — lounge areas, a wine cellar, a terrace overlooking the park, and 94 rooms and suites. Scheelsminde holds Green Key certification, and the kitchen reflects that commitment: the chef prioritises organic and locally sourced ingredients as a matter of course.
For lunch, the terrace opens onto the same park that supplies the kitchen. For dinner, the fine dining experience at Restaurant Bühlmann brings together the estate's long history and an ambition that reaches well beyond the region.
