Housed in a beautiful colonial mansion on Calle de la Serrezuela, in the heart of Cartagena's Historic Centre, Restaurante Candé has spent more than eleven years doing something singular: keeping the flavours, rhythms, and spirit of Cartagena itself alive at the table. The restaurant's full name — Cocina 100% Cartagenera — is not a marketing slogan but a commitment. Every dish on the menu traces its roots to the city's culinary history, drawing on recipes that have moved from one generation to the next.
The menu reads like a portrait of the Caribbean coast. Fresh seafood and the region's iconic rice preparations anchor the main courses, while carnero (lamb) and rabbit represent the wilder, lesser-known side of Cartagenian cooking. Soups carry particular weight here: mote de queso, a thick coastal staple made with yam and fresh cheese, and higadete, a symbolic dish that recalls the city's colonial past. These are not reconstructions — they are continuations.
For those who prefer plant-based eating, Candé offers a dedicated vegan and vegetarian section alongside its traditional offerings, and the kitchen also covers Cartagenian breakfast, appetisers, desserts, and sharing dishes for two.

In 2021, Revista La Barra, one of Colombia's most respected hospitality publications, named Candé the best formal-dining restaurant in the country.
