The story
Lai Heen is the signature Chinese restaurant at The Ritz-Carlton, Guangzhou, and has held a Michelin star since the inaugural Michelin Guide Guangzhou 2018. Recognised also by the Forbes Travel Guide, it stands as one of the most consistently acclaimed addresses for Cantonese cuisine in the city — a distinction earned not through spectacle, but through rigorous sourcing, refined technique, and genuine respect for Guangzhou's culinary heritage.
The multi-sensory character of a meal here begins before you sit down. Guests are greeted by the live sounds of a guzheng — a classical Chinese string instrument — setting a tone that is cultured without being stiff. The main dining room is framed by white porcelain tableware that lets the vivid colours of each dish speak for themselves, while eight semi-private rooms and six fully private dining rooms offer quieter settings for business meals or celebrations.
Every dish at Lai Heen is prepared under the supervision of Executive Chinese Chef Aiden Huang. The kitchen's approach balances contemporary inspirations with classic Cantonese recipes, supported by a strict selection process for rare and premium ingredients. The result is a menu that, in the restaurant's own words, "opens you up to a treasure trove of rare and premium culinary ingredients" — a commitment to sourcing that underpins every plate.
The dim sum programme is a particular point of pride: steamed seafood dumplings with caviar and crispy spring rolls filled with creamy shrimp mousse illustrate how classical Cantonese forms are elevated with premium produce. Certified tea sommeliers are on hand to guide guests through pairings — matching fragrant varieties such as Tie Guan Yin or Longjing with specific dishes — a practice that deepens the connection between the food and the region's tea culture.
Desserts are treated with the same care as savoury courses. Chilled mango sago pudding with pomelo and the peach bun longevity dish are as visually considered as they are satisfying — fitting conclusions to a meal rooted in the full breadth of Cantonese tradition.
