The story
Nestled in Vitacura at the foot of Santiago's tallest peak, Cerro Manquehue, Boragó is far more than a restaurant — it is a living research project into the extraordinary bounty of Chilean nature. Chef Rodolfo Guzmán founded it in 2006, after years of touring kitchens across Europe and Chile, absorbing techniques and refining a singular vision: to place the indigenous ingredients of his homeland at the very heart of fine dining.
Guzmán's cooking is deeply rooted in Mapuche culture, drawing inspiration from the Indigenous hunter-gatherers of Southern Chile and Argentina. The result is the Endémica tasting menu — a journey through Chile's regions that brings together produce from coastlines, mountain tops, and the restaurant's own nearby orchard. Dishes such as mussels with fava beans and unripe peaches, onion and pink tomato tarte tatin, and Patagonian lamb with fig leaf and Maule pink tomato speak to a native Chilean cuisine that is both ancient and thrillingly contemporary.
To source these ingredients, Guzmán collaborates with more than 200 people — foraging communities, small producers, and growers scattered across the entire country — ensuring every element on the plate is seasonal, fresh, and meaningful.
Boragó's commitment goes beyond the kitchen. Cerro Manquehue is also home to CIB, Guzmán's food research centre dedicated to uncovering the untapped possibilities of Chilean ingredients. With a biodynamic farm, a zero-mile cooking philosophy, and decades of painstaking research, the team has placed sustainability at the core of everything it does since day one.
Those efforts have earned remarkable recognition: Boragó claimed the inaugural Sustainable Restaurant Award at Latin America's 50 Best Restaurants in 2018, then repeated the honour at The World's 50 Best Restaurants in 2021.
Boragó has appeared continuously in The World's 50 Best Restaurants since 2015, rising to #23 in 2025 — a testament to the enduring power of Guzmán's vision. The intimate 54-cover dining room, set against the dramatic backdrop of the Andes, offers guests not merely a meal but an immersive encounter with native Chilean cuisine in its most thoughtful, sustainable, and soulful form.
