A Setting Unlike Any Other

The approach alone sets the tone. Cross a wooden bridge over a tidal saltwater lagoon, pass through dense Caribbean vegetation, and you arrive at a structure that feels like it belongs to a more unhurried era — two soaring thatched roofs built from bamboo, mahogany, wicker, marble, and Caymanite stone, their 100,000 palm fronds taking over six months to weave into place. Ristorante Pappagallo opened in 1985 on a 14-acre bird sanctuary in West Bay, Grand Cayman, and the surrounding lagoon is so rich in wildlife that most of the 1985 reference book Birds of the Cayman Islands was researched and photographed right here.

Forty Years of Italian Cuisine, Caribbean Soul

The restaurant was founded by owners of Italian heritage who brought Italian cuisine as their natural starting point. Over four decades the menu has evolved to incorporate the freshest local and Caribbean ingredients, while the Italian kitchen philosophy — fresh pasta, sauces, breads, and desserts prepared daily — has never wavered. Today the restaurant is run by Vico Testori, one of the island's culinary pioneers, and the kitchen operates under Chef Alex Menegon, whose own story is rooted in the Prosecco hills of northern Italy. He trained with international hotel groups and spent eleven years at Cipriani in Venice before his passion for travel brought him to the Cayman Islands. His approach is straightforward: locally sourced produce where possible, USDA-certified meats, and fresh local seafood, all handled with the simplicity and precision that Italian cooking demands.

The Rooms, the Bar, the Lagoon

Inside, the Pappagallo Room sits beneath a high Mexican-style thatched ceiling with parrot-themed art and glass-fronted cages housing live parrots. The Flamingo Room opens under a vaulted thatched roof with slowly revolving fans. Beyond it, the Garden Patio — a large open-air, screened-in dining area — overlooks the lagoon directly, and is especially sought after on clear evenings when the restaurant's lights cast a golden reflection across the water. An art deco bar at the entrance invites guests to settle in before dinner with a signature cocktail or classic aperitivo.

The Wine Cellar and Sunday Brunch

Pappagallo's wine list has earned the Wine Spectator Best of Award of Excellence — a distinction reserved for lists offering exceptional breadth across multiple wine-growing regions, typically 350 or more selections, with superior presentation and a knowledgeable service team. Pappagallo's list runs to over 500 labels, some imported exclusively for the restaurant, making it a genuine destination for serious wine lovers on the island.

Sunday brunch has become an institution in its own right, recognised as Best of Cayman Brunch, with more than 100 food items including a live carving station, fresh seafood, and international dishes. The dessert menu — house-made tiramisu, Tonka Bean crème brûlée, homemade Italian gelato and sorbetto — reflects the same commitment to making things from scratch that runs through the entire operation.

A Strong Sense of Family

Like the best Italian restaurants, Pappagallo runs on continuity. Many staff members have been there for years, and returning guests are greeted accordingly. Whether the occasion is a quiet dinner for two, a family celebration, or a corporate event across one of the restaurant's several private dining areas, the setting and the team adjust to suit — without losing the warmth that has kept this place at the centre of Grand Cayman's dining scene for four decades.
