The Chef and His Roots

Chef Alexandre Vachon is the grandson of farmers, and that lineage is present in everything he cooks. His Canadian cuisine is built on memory, heritage, and a close relationship with the natural world around him — leaves, roots, wildflowers, and mushrooms harvested from Québec's forests and fields. As he puts it: "I cook to tell the story of where I come from — the land, the seasons, and the people who shaped me." Nothing here is decorative; every element on the plate earns its place.

Everything is crafted in-house, with patience and an artisanal attention that extends to the sourcing of local vendors whose work reflects the same values. The result is a cuisine that feels both deeply personal and genuinely connected to place.

The menu at Le Hatley moves through the year with conviction. Spring brings tender shoots and wildflowers from the Massawippi lakeside forests. Summer draws on the abundance of Eastern Townships gardens and orchards. Autumn arrives with earthy harvest flavours and woodland aromas. Winter turns to slow, warming dishes — broths, fire, and the quiet comfort of a snow-covered manor. Guests can choose from seasonal tasting menus, including a Discovery Menu and a Vegetarian Discovery Menu, as well as à la carte options, Sunday Brunch, and breakfast.

The wine program is a serious undertaking. The cellar spans emerging regions, rare vintages, iconic producers, and Canadian vineyards, each label chosen for its harmony with Chef Vachon's cooking. The sparkling selection — from grower-producer Champagnes to Canadian bottles — is curated with the same care, and a thoughtful alcohol-free pairing program ensures every guest is considered.
