The Chefs Behind the Table

La Chronique is a chef-owned house, guided by Marc De Canck and Olivier de Montigny. Their presence in the kitchen is felt in every detail of the menu, and they sign off on the experience with a note that captures their ethos: "We hope you take as much pleasure in tasting this menu as we had in preparing it — our desire to please you will always be there." The Menu Signature

The kitchen's current offering revolves around a Menu Signature — a tasting format that moves through the seasons with a clear French sensibility grounded in Québec products. The progression opens with mises en bouche before moving through Québec lobster with green asparagus and sauce américaine, Atlantic halibut with leeks and beurre blanc, duck foie gras with red cabbage and blueberries, and Limousin beef from Québec with butternut squash and truffle jus. A cheese course is available, and the meal closes with a dessert paired with a late-harvest wine from Vignoble du Marathonien in Québec.

Each course is matched to a specific bottle — Loire Valley whites, a Douro Reserva, a Burgundy premier cru, a Saint-Émilion Grand Cru — a sequencing that reflects why Wine Spectator has taken notice. The Menu Signature is offered at $150, or $250 with full wine pairings.
