Inside the Ritz-Carlton Montreal on Sherbrooke Street West, Maison Boulud carries the name and vision of two-Michelin-star chef Daniel Boulud. The concept is precise: French culinary tradition reinterpreted through the lens of local Québécois products and artisanal ingredients. The result is fine dining that feels grounded rather than remote.

The room itself sets the tone. Light wood walls, a modern gas-burning fireplace, and ambient music create what Forbes Travel Guide — which recommends Maison Boulud — describes as a "casually elegant flavor that encourages conversation and conviviality." An open kitchen anchors a year-round greenhouse, private dining rooms and booths offer seclusion, and a terrace looks out onto Sherbrooke Street. In warmer months, the outdoor dining area draws its own quiet spectacle: the hotel's famous ducks parading around the wading pool.

The Kitchen and the People Behind It

Executive Chef Romain Valicon brings a pedigree shaped by some of France's most demanding kitchens. Originally from Lyon, he trained alongside Christian Têtedoie and the legendary Paul Bocuse, then refined his craft across the Caribbean, Spain, and beyond. He earned election to the Culinary Academy of France, was named Chef of the Year, and in 2022 received the title of Maître Cuisinier de France along with the Joseph Favre Gold Medal — before taking the helm at the Ritz-Carlton Montreal.

Pastry Chef Claude Guérin, a native of the Ain department in eastern France, joined the hotel in 2014 and was named Best Pastry Chef in Canada by Canada's 100 Best in 2018. Her work shows in the desserts: Forbes Travel Guide singles out the Chocolate Coulant — liquid caramel, fleur de sel, caramelized milk ice cream — as the kind of dish guests talk about for weeks afterward.

Guests can order à la carte, follow a seasonally inspired daily menu built around locally sourced ingredients, or surrender the meal entirely to a five-course chef's tasting menu. The French cuisine at Maison Boulud is never static — the kitchen's commitment to local and seasonal produce means the menu shifts with what Québec's producers have to offer. An interesting wine list accompanies the food, and service runs from breakfast through dinner Wednesday to Sunday.

The atmosphere draws Montréal's tastemakers, but the restaurant's real focus, as Forbes notes, is "fine dining without pretension."
