The building that houses Elora Mill Restaurant has been part of the Ontario landscape since 1833, when Scottish Naval Captain William Gilkison constructed a sawmill along the Grand River in what would become known as "Ontario's most beautiful village." The eastern wing of the structure — where the kitchen now operates — once served as the Elora Mill Distillery, brewing whiskey from 1859 to 1876 before a series of tax scandals and government raids brought that chapter to a close.
