The story

Crafted with passion, served with love

A Friendship, a Flavour, a Place to Gather

Sabor opened in 2008 when childhood friends Christian Mena and Adelino "Lino" Oliveira decided to do something simple and ambitious at once: share the food they grew up with, and offer Edmonton a level of hospitality that felt genuinely personal. Christian was born in Chile, Lino in Portugal; both were raised in Edmonton's North End, shaped by the food, music, and warmth of a tight-knit immigrant community. Before opening Sabor, Christian performed as a singer and touring Broadway actor. Lino cooked on Portugal's northern coast, learning old-world recipes from his mother, village women, and the fishermen who brought in the catch each morning. When they came home, they brought all of it with them.

The result is a restaurant that feels lived-in and intentional in equal measure — rustic, elegant, and entirely without pretence.

The Space

Sabor occupies a century-old warehouse inside Edmonton's historic Boardwalk Building, steps from Rogers Place in the ICE District. The room carries the character of the building — exposed bones, warm light — layered with Christian's love of the performing arts and Lino's artistry with food. It works equally well for a quiet dinner for two or a long, loud family feast. The dress code, as the restaurant puts it, is whatever the occasion calls for: jerseys, jeans, or Sunday best.

Adjacent to the main dining room, Bodega offers a more casual tapas-and-drinks format at your own pace, and the Atrium provides a public-private space for after-dinner cocktails or private events for groups of thirty or more.

The Food

The menu is Iberian at heart — Portuguese and Spanish traditions, local ingredients, and a strong commitment to sustainable seafood. Serving styles range from tapas to family-style to à la carte, and the kitchen leans generously in every direction.

Tapas include Portuguese salt cod fritters with citrus aioli, piri piri-dusted fried calamari, garlic prawns, and grilled sardine fillets with molho verde. Larger plates push further into Iberian territory: Bacalhau prepared with leek, carrot, white wine, and cream; grilled octopus with migas, rapini, white beans, and roasted piquillo peppers; and seafood paella with prawns, scallops, calamari, mussels, and clams. The Three Boars — grilled pork loin with chimichurri, red wine-braised boar cheeks, and belly with quince balsamic over mushroom truffle risotto — is the kind of dish that explains why people come back.

The charcuteria board draws on both sides of the Iberian peninsula, with Jamon Iberico de Bellota alongside housemade Spanish chorizo and local Alberta cheeses from Sturgeon County.

The Wine

The wine list earned Sabor a Wine Spectator Award of Excellence in 2022 — recognition that reflects the seriousness with which the program is built. Portuguese wines anchor the list, with deep selections from the Douro, Dão, Bairrada, and Alentejo, alongside Spanish bottles from Rioja and beyond. The range extends to Burgundy, Barolo, Amarone, and a thoughtful New World section. By-the-glass options include Portuguese Vinho Verde, Douro whites and reds, and Spanish Cava — making wine pairing accessible whether you're ordering tapas at the bar or settling in for a full family-style dinner.

The Spirit of the Place

Nearly two decades in, Sabor remains exactly what Christian and Lino set out to build: a place to gather, eat well, drink well, and stay a little longer than you planned. The Portuguese and Spanish cuisine is the draw; the hospitality is what keeps people coming back.
