The restaurant's commitment to regional sourcing is not a trend but a philosophy. Guests might discover osso buco de porc from La Jambonnière, confit duck leg with cranberries from the Jardins VMO, a medallion of Québec bison with a forest sauce, or silky scallops from Nova Scotia paired with Argentine pink shrimp.
