The story
Inside the Old Mill building at Millcroft Inn & Spa in Caledon, Headwaters Restaurant & Lounge brings together French-inspired technique and the best of Ontario's seasonal ingredients. The stone walls and warm interiors carry the character of the original structure, while windows frame the Mill Pond and Shaw's Creek Falls — a backdrop that changes with every season and makes the dining room feel genuinely special rather than merely picturesque.
The kitchen's approach is rooted in balance and freshness. Dinner starters include Ontario Burrata paired with golden beetroot carpaccio and sesame lime gremolata, and a Kombu Smoked Maple Cured Salmon served with soba and sake-compressed cucumber — dishes that reflect both classical training and a willingness to reach beyond European borders. Main courses lean into the seasonal pantry: a 60°C Sous Vide Rabbit arrives with truffle duck fat confit, porcini herb crumbs and a civet jus, while the Black Bass is plated with fennel, aubergine and a ginger nage. For those who prefer to stay closer to the land, a Stuffed Caramelized Fennel Ravioli with bee pollen, goat cheese and apple cider beurre blanc shows the kitchen's confidence with vegetarian plates.
Lunch in the dining room and the all-day Lounge menu offer a more relaxed register — Ontario Prime Striploin with barley and cherry tomato salsa, Mussels à la Provençale with vermouth and herbs, or a house-made AAA burger — without sacrificing the care that defines the seasonal cuisine throughout.
