The story
Nestled within the Zornitza Family Estate in the storied Melnik wine region of Bulgaria, aEstivum is a restaurant that earns its reputation with every carefully composed plate. Its name is no accident — aEstivum is the Latin designation for the summer truffle, a quiet declaration of the luxurious, ingredient-led philosophy that defines everything served here. From salads to desserts, truffle weaves its way through the menu as both signature and symbol.
At aEstivum, terroir cuisine is more than a concept — it is a living, evolving practice. The kitchen draws on the finest local products and the surrounding landscape, combining them with international gourmet sensibilities to create dishes that feel both grounded and adventurous. The menu shifts with the seasons and with the inspiration of the chef, ensuring that every visit offers something new and honest to the moment.
Leading the kitchen is Chef Milen Zlatev, a culinary artist with over 20 years of professional experience. A graduate of the HRC Culinary Academy, Chef Zlatev has honed his craft in five-star hotels across Qatar, the Netherlands, and England, and has served as a private chef for ambassadors, businessmen, and politicians in Bulgaria. His passion for modern and avant-garde cuisine, paired with a deep respect for terroir and tradition, makes him the ideal steward of aEstivum's ambitious vision. At Zornitza Family Estate Relais & Châteaux, he continues to build his philosophy that contemporary cuisine finds its greatest expression when rooted in the best of local, organic products.
The dining room seats 34 guests indoors, with a vast terrace that opens the experience to the surrounding landscape. Tall windows frame the infinite beauty of the Melnik hills, while the stylish interiors — designed to complement the flavours on the plate — create a sense of warmth and refinement. Quiet music and excellent service complete an atmosphere that, as the restaurant itself promises, you will not want to leave.
The accolade speaks for itself: aEstivum holds the Wine Spectator Best of Award of Excellence (2023), a recognition reserved for wine lists of exceptional breadth and depth. Guests can explore nearly 300 labels from the Melnik region and beyond, making every meal an opportunity to discover the extraordinary viticultural heritage of southwest Bulgaria alongside world-class international selections.
