Celebrated table

Valere

Valere in Plovdiv blends Bulgarian tradition with Latin-Asian flair under chefs Todor & Melissa, backed by a Wine Spectator-awarded cellar of 350+ labels.

The story

Crafted with passion, served with love

Valere sits inside a carefully restored historic building in Plovdiv, where the original architecture has been preserved rather than erased. The space doubles as an art gallery, displaying original works by renowned Bulgarian artist Georgi Papazov — so the atmosphere carries genuine cultural weight before a single dish arrives.

The Chefs Behind the Menu

The kitchen is led by Todor, a Plovdiv native, and Melissa, who grew up in Lima with Japanese roots. Their paths crossed while working in a Michelin-starred restaurant in California, and after years alongside world-renowned chefs in prestigious kitchens, they chose to return to Todor's hometown and build something of their own. The result is a seasonal cuisine that draws simultaneously on Bulgarian culinary tradition, Latin American sensibility, and Japanese precision — a combination that is specific enough to be genuinely interesting.

Each dish is conceived as a reflection of their personal histories: cultures, techniques, and flavors composed into a balance of aroma, texture, and presentation. Local producers and sustainable sourcing underpin the menu, which shifts with the seasons and keeps the connection to the region's landscape intact.

A Wine Cellar That Earned Its Recognition

Valere's wine program is exceptional by any regional standard. The list spans more than 350 labels, covering Bulgarian wineries alongside acclaimed international producers. Wine Spectator has recognized the restaurant with its Best of Award of Excellence — a distinction the restaurant notes has been earned for three consecutive years and is held by only a small number of restaurants across the region. For guests who want to go further, the selection of rare spirits includes the 100-year-old Louis XIII cognac, available exclusively at Valere in Bulgaria.

What to Expect

The dining room strikes a balance between modern elegance and traditional warmth — formal enough for a considered meal, relaxed enough to feel like a place rather than a performance. Seasonal cuisine here means the menu genuinely changes, anchored by local ingredients interpreted through contemporary technique and the chefs' cross-cultural perspective. Whether you come for lunch, dinner, or a dedicated wine pairing, the kitchen's ambition and the cellar's depth make Valere one of the more compelling addresses in Plovdiv.
