A Vision Born in 1999

When chef Alex Atala opened D.O.M. in São Paulo's Jardins neighbourhood in 1999, he arrived with a singular purpose: to develop a bold and original cuisine that would exalt the richness of Brazilian socio-biodiversity. Drawing on native ingredients still little known outside their home regions — jambu, tucupi, açaí, priprioca, bacuri — he set out to prove that the flavours of Brazil could stand alongside the world's finest tables. More than two decades later, that purpose has become a landmark.

The Chef Behind the Movement

Alex Atala's story is inseparable from the rise of modern Brazilian cuisine. Childhood memories of fishing trips and family camping gave him a deep sense of place; years spent training in European kitchens in Belgium, France, and Italy gave him the classical technique to translate that place onto a plate. Today, Atala and his creative partner Geovane Carneiro design D.O.M.'s menus through frequent immersions into the food cultures of Brazil's different regions and biomes, meeting producers and artisans to source the finest and most authentic products. As Atala himself puts it: *"Creativity isn't about doing what nobody else does. Creativity is about doing what everyone else does in a way that nobody expects."

Recognition at the Highest Level

The world took notice swiftly. D.O.M. joined The World's 50 Best Restaurants ranking in 2006 and remained there for 12 consecutive years — five of them inside the Top 10, most recently ranked 30th in 2018. When the Michelin Guide arrived in Brazil in 2015, D.O.M. was the first restaurant to receive two stars, a distinction it proudly maintains thanks to the team's relentless research into authentic Brazilian flavour crafted with technique, creativity, and irreverence.

The Menu: A Culinary Territory

Each year, Atala and his team launch an entirely new tasting menu inspired by a theme drawn from Brazilian culture. The current menu, "When the Jaguar Drinks Water," is a 10-course Menu Confiance — a journey of surprise unfolding across amuse-bouche, cold and hot appetisers, main courses, desserts, and petit fours. The iconic Amazonian ant has become an omnipresent signature across these menus. For weekday lunches, D.O.M. also honours a founding tradition: a refined take on Brazil's most beloved meal — rice and beans — served since the restaurant's very first day.

Atmosphere and Space

The dining room is sophisticated, elegant, and welcoming — a minimalist space where wood, soft lighting, and natural elements create an intimate, refined atmosphere without ever overshadowing the food. A private mezzanine accommodates events for up to 20 guests, ideal for both social and corporate occasions. Wine pairing across nine labels is available to complement the full tasting experience.
