A Name Rooted in History

The word barbacoa comes from the Arawak people, who roasted meats over a wooden grill during moments of celebration — a practice that gave this São Paulo institution both its name and its guiding spirit. Since 1990, Barbacoa has brought that same sense of occasion to Itaim Bibi, building on the traditions of the Gaucho peões, the American barbecue, and the rich, joyful culture of Brazilian churrasco to create something that feels simultaneously ancient and very much alive.

The Itaim Bibi Flagship

The original house on Rua Doutor Renato Paes de Barros is where the Grupo Barbacoa story began. The format is rodízio — a continuous parade of more than 20 cuts of beef, fish, lamb, and galeto, carved tableside by a team of specialists whose entire focus is on the ritual of selection, fire, and the cut. A generous salad buffet and a rotating selection of desserts round out the table, while a temperature-controlled cellar backs a wine list that has earned the Wine Spectator Award of Excellence continuously since 2013. The beer list runs to 50 specialty labels.

The main dining room seats 160, with an adjoining space for up to 60 guests — suited equally to family gatherings and business lunches. Valet parking, Wi-Fi, and a Braille menu are all part of the standard offering.

Recognition That Speaks for Itself

Barbacoa's place at the top of São Paulo's steakhouse scene is not self-declared. Instituto Datafolha and the Folha de São Paulo have named it the best churrascaria in the city, while Prazeres da Mesa recognized it as the best meat house in all of Brazil. Pitmaster Jeferson Finger was named Assador do Ano in 2025 — a detail that points to the human craft behind every cut. For a steakhouse that has been operating for more than three decades, the consistency of that recognition is the clearest signal of quality.
