The Heart of a Castle

Primrose takes its name from a small wildflower that blankets the fields around Scotland's famous castles each spring — a symbol of youth and friendship that blooms after the harshest winter. That same idea of delicate refinement shapes everything about the restaurant, which sits at the center of Castelo Saint Andrews in the highlands of Serra Gaúcha, in southern Brazil.

Each table is lit individually by a Czech crystal chandelier, and the room is deliberately intimate. The atmosphere is quiet and considered — the kind of place where the details accumulate into something you remember long after the meal.

Franco-Italian Cuisine Rooted in Serra Gaúcha

The kitchen draws on French and Italian traditions, then grounds them firmly in the regional terroir of Serra Gaúcha. Fresh, preferably organic ingredients are prioritized, and the chef personalizes recipes to the tastes and preferences of each guest — an approach that gives the menu a genuinely authored quality rather than a fixed formula.

The à la carte menu reflects that philosophy concretely. Starters include an asparagus cream with slivered almonds and truffle oil, a Serra Gaúcha mushroom bruschetta, and a Primrose salad with goat cheese and nuts. Main courses range from Acquerello risotto with shrimp, Spanish saffron and brie, to Norwegian salt cod with crushed potatoes and confit onion, duck confit with orange reduction, and Red Angus filet mignon with honey-mustard sauce. Desserts include a sopa de frutas vermelhas à la Paul Bocuse and a mille-feuille of house-made dulce de leche with seasonal fruit.

Beyond the à la carte service, the restaurant offers dedicated experiences — a Fondue Experience, a Seafood Experience, and a series of champagne pairings with houses including Krug, Veuve Clicquot, Moët & Chandon, and Perrier-Jouët.

The wine program has earned Primrose the Wine Spectator Best of Award of Excellence — a distinction held by fewer than 90 restaurants worldwide — placing this Serra Gaúcha table in genuinely rare company on the global stage.
