The story
The Bruno family arrived in Belgium in the early 1970s with a single ambition: to open a restaurant. Giovanni grew up learning the craft alongside his parents, and by his early twenties he had taken over the kitchen himself. When he and Nadia launched Senzanome in 1997 at Place du Petit Sablon, the restaurant found a new momentum — one it has never lost.
That story matters here, because the cooking at Senzanome is inseparable from it. Giovanni draws on the full breadth of Italian regional tradition, from the south to the north of the peninsula, reinterpreting family recipes with modern technique while keeping the integrity of the original product at the centre. As the restaurant puts it: una generosità italiana in un'esecuzione sottile — Italian generosity, subtly executed.
The long dining room sits in easy harmony with the Sablon neighbourhood — one of Brussels' most refined quarters. Soft colours and elegant tones set a tone that is polished without being stiff, and a smart-casual dress code is gently encouraged to match.
The cooking follows the same logic. Giovanni's signature dish — a smooth, compact stracciatella mousse with tomato sorbet and basil-infused oil — is a useful introduction to his approach: three elements, one coherent idea, nothing superfluous. Elsewhere on the menu, a braised sea bass balances salty, sweet and spiced notes with marinated raisins, demonstrating the same confident restraint.
The wine list is described by the restaurant itself as un vrai joyau — a real jewel — and a wine pairing option is available at both lunch and dinner for those who want to follow the full thread.
Senzanome's trajectory through the guides reflects a kitchen that has been consistently serious over decades. A Michelin Bib Gourmand gave way to a full Michelin star in 2004. The restaurant was named best Italian restaurant in Europe outside Italy in 2011 and 2012, and received the Gault&Millau award for best Italian of the year in 2012. More recently, Gambero Rosso — the authoritative Italian food guide — awarded Senzanome its 3 Forks distinction, placing it firmly among the finest expressions of Italian gastronomic cooking anywhere in the world beyond Italy's borders.
Giovanni has also served as Lagostina's ambassador in Belgium, a partnership that speaks to his commitment to Italian culinary culture as something worth championing beyond the restaurant walls.
Lunch is served as a fixed three-course menu for the whole table; evenings offer the full à la carte and tasting menu experience. Due to sustained demand, Senzanome now opens on Monday evenings as well.
