A Name That Means Expert

Maven is an English noun meaning "expert and connoisseur" — and the name sets the tone for everything that follows. Housed in a former 1930s warehouse of the Luiknatie on Antwerp's Zuid, the space has been transformed into what the team calls an innovative hospitality concept, one where attention to detail and finesse shape every visit.

Three People, One Clear Conviction

The story behind Maven belongs to three figures: Luc De Laet, a renowned butcher; Wim Van der Borght, an experienced hospitality entrepreneur; and Jules Koninckx, described as the "pepper and salt" of young talent in the kitchen. Opening a steakhouse at a moment when meat consumption is under public scrutiny was, by their own admission, a deliberate act of courage. De Laet's philosophy is direct: "There's nothing wrong with eating meat. But we eat it too often and too much. We need to eat less — but above all, better."

That conviction is the engine of the kitchen's philosophy, which they call noble meat craft: the preparation of premium artisan products with full awareness of sourcing and impact.

What's on the Plate

Maven works exclusively with European farms where cattle graze freely and receive proper nutrition, with full traceability guaranteed from farm to table. The team selects the animals themselves. The menu leans heavily on an extensive range of dry-aged beef — hung and dried in cold rooms before being placed on racks — alongside a broad selection of European cattle breeds as a house speciality. For the exceptional cases of Japanese Wagyu and Kobe, Maven makes a considered exception, acknowledging that these flavours are simply unmatched in quality. Artisan products, fresh vegetables, and a greenery offering a wide variety of lettuces and herbs round out the à la carte offer.

The wine list has earned the Wine Spectator Award of Excellence, a recognition that reflects the care taken in pairing this steakhouse experience with a cellar worthy of the food.

The Space and Its Rooms

Beyond the main dining room, Maven has built out a full hospitality concept. The Private Room seats up to 12 guests for intimate dinners, while The Lobby — a separate bar with capacity for up to 80 — invites guests to linger over a digestif after dinner. The restaurant also has a strong track record with events, documented through its Maven Spectacular Series.
