The story
De Karmeliet opened in Bruges in 1983, and within just two years the kitchen had earned its first Michelin star — a swift signal of the seriousness of purpose behind it. By 1989, a second star arrived alongside a move to the current address on Langestraat, a setting the restaurant has called home ever since. It was during this period that De Karmeliet built the international reputation that would see it ranked among the world's finest tables, appearing in the World's 50 Best Restaurants list three times in the early 2000s.
At the centre of everything is chef Geert Van Hecke, whose career and commitment to sophisticated gastronomy have defined De Karmeliet's identity across four decades. His cooking is described as refined and exceptional — precise without being cold, rooted in craft rather than spectacle. The flagship dining experience today continues under the name Zet'joe*, where Van Hecke's vision is expressed in full.
In 2009, Van Hecke and his son expanded the De Karmeliet story by opening Bistro Refter in adjacent premises on Molenmeers. Where Zet'joe* offers the full fine-dining register, Bistro Refter takes a more relaxed approach — a place where simplicity and flavour share equal billing in a welcoming atmosphere. Together, the two spaces reflect the evolution of De Karmeliet from a single gastronomic restaurant into something closer to a family culinary legacy, connecting generations without losing the character that made it exceptional in the first place.
Both venues are available for tailor-made events, and the De Karmeliet address also offers overnight accommodation — making it a natural anchor for anyone spending time in Bruges with food at the top of their agenda.
