Palais Coburg

Vienna's Palais Coburg pairs a 2-star gourmet restaurant with one of the world's great wine archives – over 60,000 bottles across six historic cellars.

The story

Crafted with passion, served with love

A Palace, a Chef, and 60,000 Bottles

At Coburgbastei 4 in Vienna, the Palais Coburg operates on a scale that is genuinely rare. The building houses the Silvio Nickol Gourmet Restaurant – a two-Michelin-star table where classical technique meets creative ambition – alongside one of the largest private wine archives on earth. Wine Spectator recognised the collection with its Grand Award, and the numbers behind that honour are striking: more than 60,000 bottles, over 5,000 different wines, spread across six historic cellars that rank among the most architecturally distinctive in Vienna, and the eighth-largest wine archive in the world.

Silvio Nickol at the Stove

The restaurant's identity is inseparable from its chef. In the Silvio Nickol Gourmet Restaurant, classical French cooking meets Asian accents and regional Austrian ingredients, producing multi-course menus designed to engage every sense. The kitchen's signature format is the Carte Blanche: guests surrender the evening to Nickol, who composes a seasonal chef's-choice menu from delicate amuse-bouches through to the final sweet course. The evening includes a kitchen visit and personal exchange with the chef – a format that turns fine dining into something closer to a private conversation about food.

The Wine Archive as Destination

The Weinarchiv is not simply a cellar attached to a restaurant; it is a destination in its own right. The six vaulted cellars beneath the Palais hold rare vintages and exceptional bottles that form the backbone of the wine pairing experience upstairs. Exclusive tastings allow guests to move through the collection before or after dinner, guided by the same seriousness of purpose that earned the Grand Award recognition.

Two Tables, One Address

For guests who want something less formal, Clementine im Glashaus serves modern Austrian cuisine with an international perspective in a charming glasshouse setting – breakfast, lunch and dinner all available. The two dining rooms give the Palais Coburg an unusual range: from a leisurely afternoon meal in the glass pavilion to a full Carte Blanche evening with European and Asian inflections in the gourmet restaurant, the address accommodates very different moods without compromising on quality at either end.
