The Philosophy Behind the Place

At the core of Pilu at Freshwater is a single, quietly powerful idea, expressed by chef and owner Giovanni Pilu himself: "Food, and the hospitality associated with sharing it, is integral to the Sardinian way of life." That conviction has shaped every aspect of the restaurant since it opened on Moore Road, steps from Freshwater Beach on Sydney's Northern Beaches — and it is what draws Sydneysiders back, season after season.

Sardinian Cooking, Honestly Done

The menu is rooted in Sardinia but reaches across Italy's regions, from Lombardy in the north to Campania in the south. Giovanni and his kitchen team source the best local, seasonal produce, supplementing it with high-quality Italian imports where the dish demands it. The result is cooking that is typically Sardinian in character — re-interpreted through modern technique while remaining true to tradition and regionality. The wine list follows the same logic: the sommeliers maintain a focused selection of Sardinian and Italian bottles alongside Australian labels, with particular attention to matching wine to each dish.

For those who want to surrender to the kitchen entirely, Convivio — a five-course chef's menu — offers a more intimate, unhurried way to eat. Inspired by the Sardinian tradition of gathering around the table, it is available for lunch and dinner mid-week and on weekends.

The Setting and the Team

A path from the beach leads through the garden to the beach house that is Pilu's home. The space has a seaside ease to it, and the team — longstanding front-of-house staff, sommeliers and chefs drawn from both local and international backgrounds — are consistently noted by food journalists and industry peers for their warmth and unobtrusive knowledge. Giovanni's wife Marilyn is equally central to the welcome; every guest, the restaurant says, is received like a returning friend.

That consistency over more than two decades has earned Pilu a remarkable run of recognition. The Sydney Morning Herald Good Food Guide has awarded Two Chef's Hats every year from 2005 to 2025. Australian Gourmet Traveller rated it Two Stars for over a decade and inducted it into its Hall of Fame for wine. The restaurant has also received Gambero Rosso's 2 Forks distinction — a mark of quality that places it among Italy's most respected references for Italian cooking abroad. The 2023 Restaurant & Catering Awards named it NSW Best Formal Italian Restaurant.

Beyond the Dining Room

Pilu at Freshwater also hosts a programme of cultural events throughout the year — literary conversations, regional Italian dinner series, and winemaker evenings — making it a place that engages with food as something broader than a meal.
