The story
Enter Via Laundry in Melbourne treats regional Indian cuisine as a living archive rather than a fixed menu. This philosophy guides Chef Helly Raichura, a self taught cook who traded corporate human resources for a career dedicated to tracing India’s culinary geography. Raichura first built a devoted following by hosting guests in her own kitchen, eventually launching this Carlton North venue to maintain that intimate dining model. Her work earned recognition from the Australian Good Food Guide for consistently delivering hyper regional plates.
The kitchen changes its entire program every few months to highlight different provinces and their local ingredients. The present Rajasthan selection features dishes like Palak Patta Chat sourced from Jodhpur streets alongside royal preparations such as Safed Maan and Laal Maan from Jaipur. Guests can also expect desert staples like Bati and wild game dishes drawn from the Ranthambore forests. These plates arrive on either a five course or ten course itinerary, allowing diners to follow the chef’s precise balance of spices and textures.
A narrow alleyway provides discreet access to a room designed around individual tables and warm hospitality. The interior displays Australian Aboriginal artwork alongside traditional Indian textiles to reinforce the cross cultural dialogue present in the kitchen. Patrons arriving for the evening service can visit the bar area for signature cocktails crafted by Tom McHugh, which merge native Australian produce with classic Indian cooking traditions. Expert sommelier Ben Knight curates the accompanying wine list to align closely with the shifting regional menus.
