Born in Hong Kong and now firmly established at The Shoppes at Marina Bay Sands, the restaurant channels that same spirit of cultural convergence into every aspect of the experience: interiors that blend New York industrial chic with classical Chinese elements and Singapore's native flora, and a kitchen that applies modern techniques to time-honoured Cantonese recipes.

At the helm is Executive Chef Lam Kwong Ming, a figure with over four decades of cooking experience across Hong Kong and Singapore — a tenure that has made him something of a legend in the city's Cantonese dining scene. His influence is felt in the precision and depth of the menu, which balances heritage and innovation without leaning too hard on either.

Dishes Worth Planning Around

Several signatures here require advance notice — and for good reason. The Applewood Roasted Peking Duck, the Apple Wood Smoked Pluma Iberico Pork with Yellow Mountain Honey, and the Crispy Roasted Pork Belly are available on a first-come, first-served basis daily and can be pre-ordered by phone. Beyond these, the menu features the Crispy Triple-Cooked US Black Angus Short Rib, Signature Lobster "Ma Po Tofu", Crispy Prawns with Salted Egg Yolk and Oatmeal, and a Wok-Fried Whole Crab in Singapore-style black pepper — all made with sustainably sourced ingredients.
