The story
MONTI has spent a decade as one of Singapore's most recognisable Italian restaurants, positioned along the Fullerton Bay with the city skyline as its backdrop. What began as a single dining destination at 1-Pavilion, 82 Collyer Quay, has grown into a brand that holds the Wine Spectator Award of Excellence, Two Temples from the Accademia Italiana della Cucina, the RAS Epicurean Star Awards, the World Gourmet Awards, and the Ospitalità Italiana Certification — a body of recognition that reflects consistent, genuine commitment to Italian culinary standards.
At the centre of MONTI's kitchen is a team that balances local roots with Italian authenticity. Chef Felix, Singaporean-born and steeped in Italian culinary tradition across more than two decades in fine-dining restaurants worldwide, serves as Culinary Associate Director overseeing cuisine development. Chef Andrea, a native Italian, leads the kitchen as Chef de Cuisine. On the operations side, Massimo as Group Director of Operations and Davide as Operations Manager bring the warmth and hospitality of their homeland to every service. Together, the four shape an experience where precision and genuine Italian character sit side by side.
The Italian cuisine at MONTI is built around handcrafted pastas, composed appetisers, and entrées that draw on premium ingredients and classical technique. Lunch spans a weekday Colapranzo menu and a Dolce Vita Weekend Brunch, offered in a light-filled space with salads, pasta, and meat plates alongside an Italian-style afternoon tea. Dinner runs seven nights a week in a more intimate register — plush seating, warm personalised service, and chef-forward menus available à la carte or as a communal format, with a cocktail happy hour from 5:30 to 7 pm.
For MONTI's tenth anniversary, the kitchen has composed a dedicated Communal Menu — a progression of signature dishes spanning past and present — designed to be shared at the table.
The restaurant's setting along the Fullerton Bay gives it one of Singapore's most dramatic dining backdrops, and the venue extends to a rooftop that hosts weddings and private events. The Italian cuisine carries through to catered events, with customisable menus and house-crafted pastas at the centre of any occasion.
