Head Chef Karolis Narušis leads a kitchen where patience is the main ingredient. Soy sauce is aged for months. Certain ingredients marinate for up to 72 hours. Sauces simmer for 48 hours. This unhurried process – part Japanese discipline, part European sensibility – creates layers of umami that unfold with each bite.
The space itself mirrors the philosophy: clean lines, a calm atmosphere, and air conditioning for comfort.
