The signature set menu, priced at 165 per person, is a carefully composed journey. It begins with a choux pastry filled with Mimolette cheese and Vin Jaune cream, topped with white sturgeon black caviar. Course after course follows: pickled courgette with yuzu apple and dill emulsion, blue fin tuna with Sicilian orange and bergamot, lobster with Hokkaido bread and butternut squash pudding, and a galette au Wagyu with buckwheat pancake, Comté cream, and ponzu. A beetroot consommé with braised beef short rib and Iberico lardo gratin precedes an intermezzo of elderflower and apple verjus. The main course is a quince-glazed dry aged pigeon with gyokuro jus, and the meal closes with a roasted Goma ice cream, yuzu compoté, and Okinawa miso caramel. A vegetarian version is also available, with highlights like a chantarelle course with stracciatella and kimchi crisp, and a wood oven baked truffle eggplant.
The À la carte menu expands the possibilities, featuring crudo such as Wagyu tataki with kombu dashi and langoustine sashimi with caviar, temaki sushi, and entrées like lobster roll with truffle yuzu butter and Wagyu gyoza. The Kobe Grill Selection includes lamb carré, dry aged pigeon, and Japanese Wagyu A5 striploin, all prepared with an open-fire technique that adds depth and smokiness.
