Demoloftas, a multifunctional space in Vilnius, brings together flavors, objects, and people. Within it, the restaurant Demo was created with a single aspiration: to unite gastronomy, people, and art. That vision has earned it a Michelin star, a recognition of high-quality cooking that feels both deserved and organic.
Chef Tadas Eidukevičius believes that true art on the plate is born not only from craftsmanship, but from ideas and a deeper philosophical context. Each dish in his signature tasting menus — available in seven or ten courses — is a distinct thought, exploring consumption culture, behavior, traditions, and even changes in ecosystems. The menu is constantly evolving, shaped by what nature can offer at its finest. Guests come not just to eat, but to question, discover, and, hopefully, find inspiration.
The restaurant’s modern Lithuanian cuisine draws inspiration from local farmers, and the atmosphere is deliberately thoughtful. The space itself — a unique interior with a constantly changing art gallery upstairs — sets the stage. The evening is a journey, not a meal. A seven-course tasting menu is priced at €85, and the ten-course version at €115. Drink pairings are available, and the kitchen is open for dinner from Wednesday to Saturday, 17:30 to 23:00. A smart casual dress code is recommended.
During the day, Demoloftas operates as a café serving specialty coffee, pastries, and a monthly changing brunch menu. But it is the evening restaurant that has drawn international attention. Demo’s Michelin star places it among Lithuania’s finest dining destinations, yet the team remains grounded in their mission: to nourish both body and mind.
