Slow Down, Reconnect

At Red Brick, set among the fields of the Farmers Circle organic farm in the Lithuanian countryside, time moves at nature’s pace. The restaurant opened in August 2023 in a carefully reconstructed 19th-century manor house, where original red bricks, roof structures and window openings remain. Glass walls and a cathedral-like skylight, inspired by wabi-sabi principles with a Nordic touch, connect the interior to the surrounding landscape.

Chef Ignas Damanskas

Lithuanian chef Ignas Damanskas leads the kitchen, creating menus that change with each season. He works with produce from the farm’s regenerative fields, foraged ingredients from nearby forests, and seafood from the Baltic and Nordic regions. The dinner menu, priced at €97, changes according to seasonality and availability. Recent dishes have included garden bouquet with rhubarb, pike perch with radish and apples, and pork with ramson and beetroots. Cooking on heirloom open-fire equipment is a natural part of the evening.

A Farm with History

The manor’s story reaches back to the 19th century, when it belonged to a soldier in the Russian Tsar’s army. After Lithuania regained independence, the farm was reclaimed by the original family. In 2018, Danish food entrepreneur Niels Peter Pretzmann acquired the farm, turning it into a model of sustainable food production. Today, more than 600 hectares are cultivated organically, with over 400 Black Angus cattle raised on prairie principles to revitalize soil micro-life. The kitchen gardens span 15 hectares, and 800 free-range hens provide organic eggs.

An Immersive Experience

Dinner at Red Brick is part of a longer stay. Guests can check into the Sleepy Horse guest house, a former horse stable converted into 15 double bedrooms. The evening begins with snacks and drinks, followed by the tasting menu. In the morning, a Red Brick cooked breakfast is served. Guests are welcome to explore the farm and pick vegetables in season. The experience is guided by the Food Triangle vision: sustainable practices, support for local traditions, and sourcing Baltic produce.

Michelin Recognition

In 2026, Red Brick earned a Michelin Recommended award, the first restaurant in Lithuania to receive an official ecological certificate at Silver level. It stands as a destination for modern cuisine rooted in the land.
