The story
Sumas is the realisation of owner Jen’s dream to run her own place. “Don’t lose focus – just do it,” she says, and that spirit runs through every detail of this modern restaurant on Gorey Hill. The team shares her passion: manager Paul creates cocktails shaped by his travels, while waitress Gwyn delights in matching wines to a menu that draws on influences from across the globe. Together they have built a restaurant that feels both personal and polished.
The kitchen works with fresh, local and seasonal produce – the best seafood the island has to offer appears regularly, from Royal Bay oysters to fruits de mer platters. The menu changes to reflect what is at its peak, with dishes such as fresh pasta with black truffle and Parmesan sitting alongside maple-glazed short rib of beef. The cooking is rooted in French technique but open to international flavours, making each meal feel both grounded and surprising.
